This is a real nutritional powerhouse with the high fiber beans, eggs, fresh veggies and good fat avocados. You could so easily leave out the tortilla if you feel like less bulk. It's so good either way.

Chopped fresh tomatoes
a splash of lime juice, a little cumin, salt and pepper
The Breakfast Tostada's
a 6 or 8" tortilla (warmed for about 10 seconds in the microwave
Black Beans (mine were homemade, but canned are just fine)
a little monterey jack cheese grated
Scrambled eggs (1 used 3 eggs for two servings)
Pico de Gallo
avocado to garnish
