My Mom's Bean and Rice Soup
So, I got this text last week from Mom:
Steve Sando Beans (www.ranchogordo.com)! Soup with flageolet beans, ham bone, mirepoix, chicken broth....then wild rice, basmati, and more mirepoix.......it was so good! It cooked all day on low.
Note that she just made this up! No recipe. She just started with the beans and built from there. You can see where I get my tendency to go off script on a recipe. (Mirepoix is a chopped mix of onions, celery and carrots and can be purchased at most grocery stores). You can chop- your own, but it's easy to buy it.
Mom ate her soup before she took a photo, so I reproduced it yesterday in my Instant Pot.
My Pot of Soup:
1/2 lb of dried white beans (your choice)
2 quarts of chicken broth
About 2 cups of chopped mirepoix (Onion, Carrots, Celery)
ham bone (I bought mine at Fred Meyer in a pack of 2 for soups)
2 bay leaves
1 tsp herbes de Provence (I add that to most soups)
COOK IN THE INSTANT POT FOR 40 MINUTES. Remove the Ham bone and break the ham into chunks, putting back in the pot. Discard the bone and the bay leaves.
20 minutes before serving, I added about 1/2 cup Basmati rice and set the Instant pot for 5 more minutes.
Serve when ready!
