(NOT Low Glycemic, but we'll go with the 80/20 rule since the soup and salad balance it out!)
We spent a few days in balmy, sunny Portland this past weekend and arrived back in Boise to temperatures in the 0-3 degree range as we woke up this morning! When it's that cold I feel like spring will arrive a little sooner if I start cooking with lots of fruits and vegetables! Today I made this minestrone soup with a pound of ground beef. It's our summer garden in a pot, packed with all the super nutrients we want to stay healthy in the freezing weather. I'll serve it tonight with our Evolution Carrot Salad and a biscuit or bread (NOT Low Glycemic, but we'll go with the 80/20 rule since the soup and salad balance it out!) |
